Today’s Blog Everyday in May theme asks ‘what’s in your fridge?’ I was quite scared that it would just be a beer and a mouldy courgette, but luckily there was enough to make a meal out of, so I thought I’d tell you what I came up with.
Roasted aubergine pasta and halloumi
- Half an aubergine (or a pepper, onion, whatever roastable veg you can find)
- Cherry tomatoes
- Half a pot of pasta sauce
- Clove of garlic
- Fresh pasta (dried would do)
- Balsamic vinegar
Cut the aubergine (and/or other veg) into small pieces and place on a baking tray. Drizzle with oil and place in a pre-heated oven (180 c) for 30 minutes. Remove from the oven when done.
Heat oil in a pan and fry off some garlic. Add mushrooms and fry until they soften, then a splash of balsamic. Add tomatoes and roasted aubergine, then add sauce and cook slowly over a low heat. This makes it go all sticky and lovely.
Cut a few slices of halloumi and place under a hot grill until golden brown. At the same time, cook the pasta as per packet instructions, drain and then add to the sauce and stir.
Serve pasta and sauce with slices of halloumi on top. Beautiful!
I often find that I forget what’s in my fridge and buy too much stuff, which leads to food waste. So I’m making an effort to raid the fridge more often, even if it does make for some weird ‘fusion’ dinners.
