Autumn Baking: Beetroot Brownies

Putting vegetables in cake is really nothing new (carrot cake anyone?) but I’d never tried putting beetroot and chocolate together, despite it being a pretty popular combination now. However I’d always wanted to give it a go, so I thought I’d try out this recipe.

Chocolate and beetroot shouldn’t really work, but someting about the earthy taste of beetroot and rich dark chocolate is a match made in heaven and makes for one soft and gooey cake.

They are a bit of a luxury (mainly for me because I could only find organic beetroot and don’t believe in scrimping on chocolate). But the recipe makes plenty and they’ll last in the fridge for at least a week… if you don’t eat them all first!

This may sound strange to some, but chocolate cake really isn’t my favourite thing. Give me spiced, fruity cake any day of the week. Plus previous attempts at chocolate cake have turned out pretty dry, but there’s something about the beetroot that keeps these babies moist and gooey for days on end and it has really changed my mind about chocolate brownies. Dangerous stuff! But they’re surely one of your five a day, right?
